This recipe is from an old neighbor who came to live in Texas from Italy when he was young. His wife made this frequently and boy is it good!
4 medium onions finely chopped
4-5 cloves garlic finely chopped
1 46oz can of tomato juice
2 cans Hunt's tomato sauce with bits
2 cans tomato paste
1 cup RED WINE (any will do but I like Merlot)
2 T black pepper
2 T olive oil
Saute onions in oil and add wine, tomato paste and stir until the tomato paste is dissolved in and mixed well. Add the pepper, tomato sauce and still until mixed well. Then add garlic and tomato juice and stir well. Cook for six hours covered, stirring occasionally on low heat. Remove the lid and continue cooking for at least 2 more hours. Add your meatballs or sausage or mushrooms at this last stage if you wish. Freezes well.
